Easter baking that brings us together

This yummy Easter cookie recipe is dedicated to my beloved grandma, and boy it is worth your time! In Greece it is a tradition to bake Easter cookies and tsoureki and dye Easter eggs on Holy Thursday, and I recall eagerly looking forward to this day when I was a kid. I loved going to my grandma’s house and becoming her young assistant for the preparations, but more than anything I loved reaping the delicious rewards at the end! Without a doubt, family baking brings the family closer and makes us feel some much-needed warmth in our households, so try our Easter cookie recipe with your beloved ones this Holy Thursday (or at any time of the year you please) and you will not regret it.

Ingredients:

  • 250gr plant based butter
  • 2 cups sugar
  • 4 eggs
  • 1 cup orange juice
  • 1tsp baking soda
  • 1tps baking powder
  • 1tps mastiha
  • 6 cups flour
  • +1 egg for the egg wash

Method:

  1. Blend the sugar, the mastic, the baking powder together and set aside
  2. Mix the butter and the sugar and add the eggs one by one
  3. Mix the soda and the orange juice, and add it in the mix of butter
  4. Add the liquid mix in the bowl of flour add keep mixing
  5. Leave it rest for 30′
  6. Split the dough into three pieces and roll each one into a thick baton shape
  7. Then cut each baton into smaller slices and shape each slice into a thin rope shape
  8. Mold each rope into an eight-shape
